The second Daniel Weller edition swaps in ancient spelt wheat for a 10-year, 94-proof look at what “wheated” can mean beyond the usual mashbill.

After 2023’s Emmer Wheat debut, Buffalo Trace’s Daniel Weller line is back with Spelt Wheat — a 10-year experimental wheated bourbon that keeps the process deliberately plain so the grain can talk.

Spelt is one of the oldest cultivated wheats, more common in European baking than American mashbills. Here it stands in as the secondary grain, aiming for nutty, biscuit-forward aromatics over flashy barrel tricks. Bottled at 94 proof, the Distillery’s notes run cookie spice, dried fruit, soft leather, butterscotch, and a long, tea-like finish.

Packaging keeps the compass stopper with coordinates nodding to Daniel Weller’s Kentucky farm near Botland. Suggested retail is a steep $549.99 for 750ml in limited distribution starting March 2026 — collector pricing for a grain experiment, not a daily Weller Special Reserve pour.
